I finally can write a proper review for this book. A little more than a year ago when I started my quest of "levain bread" I was starting from scratch. M Reinhart's book was a good introduction on the subject and I gave birth to my levain (!) with his instructions. But this book dedicated to sourdough bread brought me further on the path. My sweetheart joined me on the adventure and we now have a beautiful mother levain not to sour but really fertile that we keep on a diet of unbleached white flour. And we keep really little of it in the frige. All the recipe I have try from this book since my levain is fertile have turned really well. Unfortunately they use metric measurement instead of weight which is not has precise. But still, there is a nice" palette"of recipe going from bread to pancake, to muffin and pizza dough. It is one of the cookbook I often use.
