page 88: Silky corn soup with scallions and green apple is a terrific dish. No milk or cream, yet it is silky sweet with an intense corn flavor. Visually beautiful also, with red spots of sriracha contrasting with the pale yellow of the soup, and a few shaved green apple wedges floating on the surface.

Heidi has one on 101 Cookbooks but I have not tried it.

Thanks, that's the one I used. When in doubt, it's usually a safe bet to go with Heidi. It turned out great!

Thanks! This one isn't too far off of Heidi's. Plus, I was planning to serve it with my pickled peppers so the flavors aren't too far off. Thanks for your help!

I'm cooking for a crowd on Sunday and I'm on the hunt for a simple, good corn soup/bisque recipe. I'd prefer one without cream, but can also make a substitute. Let me know if you have a favorite in your rotation.
