I make a serious effort to make "Meatless Monday" or at least "mostly Meatless Monday" to utilize any remaining fresh bounty from the Saturday Farmer's Market. Then it is usually "Pasta Wednesday" fix. Almost nothing will interfere with "Pizza and a movie Friday", unless a fresh piece of Pacific Northwest Salmon appears and then all bets are off! Though I live by- "cook whats in the market" and that will always take precedence. No fixed recipes even for the defined days- the options are endless. Bon Appetit!

Lentils at the moment - at other times, we go wild for chickpeas. We have a basic red lentil dal at least once a fortnight, unless it's a lentil salad. Newer staples are shakshuka (eggs poached in spicy tomato sauce) and miso soup. We used to do salad wraps every Friday a couple of years back, but now it's our take-out night (we're terrible!).
Risotto and veggie burgers are also favourites.
We also have a tradition of soup on Sunday nights, and because there are only two of us, there are usually leftovers for Monday night as well.

Vegetarian entrees
Most of my weeknight favorites have long-forgotten origins or aren't really recipes- "enchilada pie', stir fry, corn chowder, Thai spicy beans (from a magazine) and mushrooms all ways.
