I usually make pumpkin cheesecake, it is to die for. I have used two recipes from Epicurious and prefer the ginger snap crust from the Gourmet 2006 recipe "Pumpkin Ginger Cheesecake Pie" and the filling from Bon Appetit's 2005 "Spiced Pumpkin Cheesecake with Caramel Bourbon Sauce". The ginger filling in the first recipe was bland. Just be sure to make it early enough that it can cool for 6 hours to overnight. Don't forget the ginger snap crust!

Thanks Oaktoncook! This combo sounds delicious! I'll run it by my kids and see what they'd prefer. I was a total cheesecake kid growing up - only my Mom's, but my kids have never been into it. Maybe it's time I make my Mom's cheesecake for them after Thanksgiving (which I believe is the recipe off the graham cracker crust label - with almond extract <swoon>). She has ruined me for eternity from ever being able to enjoy cheesecake anywhere else.

I've been making the recipe off the back of the Libby's pumpkin can since I was little. In fact, it's one of the first recipes I made on my own. I've long since switched from Libby's to organic pumpkin from Whole Foods which works just as well. That recipe makes a really dense filling that would probably work in a crumb crust. I've never made the recipe from Bubby's Homemade Pies but the filling looks pretty similar and they list graham cracker crust as an option. This year however, I'm going to try Ina Garten's Ultimate Pumpkin Pie from her new cookbook. It's supposed to be lighter and more custardy. Good luck Lisa! Thanks Shannon. I have two different cans of pumpkin in my pantry and didn't even think to look right on the label. Let me know how the new pie recipe comes out! :)
