- All-rye Honey Cake CockaigneWhat a strange recipe - a water-based quick bread with no fat, beaten on high speed for 15 minutes, aged 3 days before cutting into it. Strange but really lovely, especially toasted and slathered with butter. I would like to try it again with more honey subbed for the sugar & water, to better highlight a strong honey.

- The Jasmine Rice soup with Mushrooms, Green Onions & Crispy Garlic on p84 is great - I love it when I'm sick (even though I don't really like mushrooms).
The spring rolls are wonderful, worth having a party for.

I adore this book! I too was vegetarian and vegan for many years, but this book makes sense to me within that context because it's so focused around humane treatment & slaughter, the ecosystem we occupy with animals, and with showing them due respect by using their bodies completely and well.
One down side is that his cooking times for braised or other slow-cooked recipes are quite a bit too short. I think the temperatures are a bit high as well. If you use common sense to temper the recipes, they're just fantastic.
