Got this new book from Peter Reinhart last week and have read it from top to bottom. There is so many way to use the wild yeast mother I made last winter. Will cook my first bread from it this week-end. I am sure it will be a rare 5 stars book. Peter Reinhart seems to be a genuine and bright men.
Good book - I bought mainly for ability to make whole wheat pizza dough, and for that - it is fabulous. Obviously, none of these recipes, using the fermentation method, can be made quickly. But, they work and are delicious.
I liked all the explanations at the beginning.. Now I understand why I have to this or that.. It's very clear and It worked! of the book. The breads are very healthy and very good! A must in my library!
