Thoughts About This Book

The beautiful cookbook has a rich assortment of recipes. The novice cook can find much to prepare, great salads and soups, and Paula gently takes you through the more difficult recipes. I have prepared perhaps 15% of the recipes, and in general, they are outstanding.
In particular, you should read the section on couscous and -- at least once -- prepare it by the repeated steaming process. This one lesson is worth the cost of this book. It will transform your idea of cous-cous, and a year later, my children still talk about that one batch of steamed couscous.
