I really wanted to like this because I adore chickpeas in all forms. I especially love falafel and have been wanting to find a version that uses canned beans (for those times when I don't have cooked in the fridge or freezer, like this week, and don't feel like making up a batch because I'm under the weather with a sore throat and just want to be laying in bed). I also want to find a recipe that I can bake instead of fry it to make it a no-brainer, go-to dinner or snack for my kids. It's hard to feel good about handing them a deep-fried anything but this patty was very dry and crumbly and even *I* didn't feeling like finishing my second little patty at dinner last night, of which I had planned on eating three! Hmpf. I was disappointed with this. I should have thrown an egg or two into the mix. Maybe that would have helped. But no matter, I'm not trying the again. The search continues for an easy-peasy baked falafel.

Lisa, I probably shouldn't even be commenting without the book sitting in front of me but I remember really liking the baked falafel in 366 Delicious Ways to Cook Rice, Beans & Grains by Andrea Chesman.

I'm also always looking for no-fry patties of any kind... There are chickpea patties in Nigel Slater's Tender. I tried them once and they were great (although a bit crumbly). They are fried but only with a touch of oil. They are very very easy to make and use canned chickpeas. The best thing about them is the sauce - a beetroot tzaziki - raw beet with yogurt and garlic with a dazzling color and taste.
