My sweetheart and I finally had time to cook a causy meal and sit together at the table to enjoy it! December has been such a crazy month, full of cooking but mostly for customers and parties. It was so good to cook a little meal just for the two of us. And this was perfect after a day of hicking in the snow. Even if I had no more cumin and used red wine instead of white this dish was excellent. I served it with the green beans with bacon and a guacamole with corn nachos. A1!

In the spirit of the entitled recipe and at the risk of horrifying vegetarians, I grilled a New York Strip Roast in the Argentinean Chimichurri style- mainly because I did not have skirt steak. So, I rationalized that this wasn’t really cheating on a recipe review, only stretching the intent slightly. Though, I can tell you that in all of my travels in Argentina, eating meat and offal at every Parrilla I encountered, I don’t recall ever seeing skirt steak. It is however certain to be there because every part of every animal is cooked and eaten.

My inspiration came from Gran Cucina Latina, but the fond memories come from Las Nazarenas Traditional Criollo Grill in Buenos Aires, located just across the street from the Sheraton hotel. I have been fortunate to eat meat there on many occasions, always immediately upon my arrival in BA, and afterward as many times as possible during my stay. Believe me, you have never quite fully experienced meat until you have eaten it in Argentina. You will see whole animals cooking, while staked vertically and positioned adjacent to an open wood fire pit, in the front window of the restaurant!

Every restaurant in Argentina serving asado- the national dish, greets you immediately upon your seating with their version of amuse-bouche- a complimentary warm empanada. A fine and welcome beginning to any meat escapade. On separate occasions my travels took me to the interior to Rio Cuarto and the geographical center of the country at Cordoba. Everywhere I went in Argentina I discovered that Argentina is also a melting pot of practically all Europeans and I found a least expected obvious influence of Italy in the cuisine. Meat and pasta- what more could I ask for? Oh yes, delicious inexpensive red wine- it is there as well.
