While I am waiting for organic citrus to show up in my market I thought I would try this recipe. The technique is not one I've seen- grind up oats and soak overnight in buttermilk then make a batter. These are actually griddle cakes and the instructions are to make the batter thinner than you would for pancakes. I had a bit of trouble with the griddle temp in order to nicely brown them and not leave them raw inside. I served them with homemade 'mostly apricot' jam. Once I accepted that these were not scones, and were similar to another oatmeal pancake recipe I have, I could enjoy their simplicity. I do recommend decreasing the salt to 1/2 tsp, and adding nutmeg, cinnamon or vanilla, something to complement the marmalade they are meant to carry.
