I have several James Beard cookbooks, though if I could only have but one, this would be the one. This amazing volume contains a collection 1500 regional American recipes and ancillary information within its pages, each in Chef Beard’s direct style- that being without step-by-step instruction. I recommend this book and it is my choice for the title of “The Encyclopedia of American Cooking”.
