This very fine book is more than a collection of healthy recipes. Author Carl Jerome begins this 1993 volume by providing his prospective on how the 1960s counterculture changed American food. He points out that the counterculture raised nutritional awareness, which basically brought about the proliferation of organic and natural foods and ultimately sustainable farming.
The recipe scope is from soup to nuts and contains a very good bread section. They are simple, straightforward, stress a healthy lifestyle and in most cases are contained on a single page.
