Definitely better than the the vanilla ona one because it dosen't seem has sweet. But the texture is not what I expected from a fudge. It is quite hard. In my souvenir fudge as the texture of a really thick icing. It is also hard to cut. It certainly does not make nice little square like the image shows! Deception even if the taste is good.

My dear mother is crazy about these candies so yesterday we got together and after lunch we made those. It was a lot of fun! Candy making often result with strange textures. Make sure all the ingredients are ready before you start And grease your pan with A LOT of butter.
I boiled the sugar until 280 F but wasn't sure at which heat intensity so I put it quite high because the temperature wasn't coming up fast an off... Everything went well until I dropped the honey then it became quite dark in the middle and wasn't sure if I could mix the whole thing because often with sugar you have to let it undisturbed. Then it went to the desire heat pretty fast. Everything else was added and the magic happened! Next time I will bring the sugar to a boil with a medium high heat and will drop the honey after it had reach the final desired heat (310F).
The sponge was a bit to dark but the taste and texture are good. We dipped half of each pieces in tempered dark chocolate and it became decadent!!! It made quite a lot so friends and neighboors will be happy! Candy making is quite an art.

THIS IS WAY TOO SWEET. I knew when I saw the list of ingredients that it would be a sweet treat but I wasn't expecting an instant sugar rush from just a third of a bite. I definitely won't make that one again. But the kids that were visiting home loved it... And since it is maple season pretty soon up here in Québec I might try the maple fudge which does not seem as sweet.
