After Tassajara Cooking and Heidi's 101 book this would be my next pick for introducing someone to a veggie lifestyle.
The book introduces materials, techniques and the main ingredients in a well written easy to follow style that encourages the chef to explore and experiment.
It's a book that is great for newcomers and the old hand alike, especially the bread section!!!!

I've had a chance to look through this book at the Zen Center (Yokoji) where I volunteer to cook once a week. It is very well thought out and the recipes look great. The Tenzo (head cook) at Yokoji told me she loved it because it was a cook's book. It's on my list of 'Books I Want'.
